
For the longest time I wanted to get into meal prepping. The idea of prepping some of your meals on a Sunday, so you could breeze through the morning, grabbing your prepared lunch for work was extremely enticing. I looked up meal prep ideas, I bought ingredients, but by the time Sunday rolled around I would flake out. Eventually I put together some of the meals, and while they tasted great on a Monday or Tuesday, by Thursday they were starting to get soggy. It’s all a matter of trial and error I suppose.
I kind of gave up on the concept, and revisited it recently because I saw a lunchable. I thought, how can I create a lunchable for myself? The easiest concept I came up with was a yummy tuna salad with cut up veggies and crackers. It’s simple, delicious, and nutritious (I think, I’m not an expert here).
Tuna Salad Ingredients:
4 cans of Safe Catch Tuna (I use it because it’s the lowest mercury of any brand guaranteed, 24g of protein per can, and wild/sustainably caught.)
1/2 cup of Mayo
1 Avocado purred
1/4 cup dijon mustard
4 mini dill pickles diced
1/3 cup pickled red onions chopped
healthy dash of cayenne pepper and salt
Ingredients for the rest of the lunch:
Carton of Baby Tomatoes
2 Cucumbers
2 Bunches of Radishes
Jar of Green Olives (I get the ones with pits, but pitted is fine too)
Box of crackers (I use Simple Mill in either Sea Salt or Cheddar or Triscuits)
Directions:
On Sunday night, Mix all the Tuna Salad ingredients together in a big bowl. Once everything is combined, portion them out into little 1 cup containers for Monday through Friday. Slice up the cucumber and radishes. In 5 separate containers, portion out a handful of tomatoes, sliced cucumber, sliced radish, handful of olives, and (in a separate baggy) a handful of crackers. Stack the veggies in the fridge, and keep the baggies of crackers in a bin close to where you pack your lunches in the morning.

This is one of the easiest lunches to make, and it keeps me full until my 3pm coffee! The best part, nothing gets soggy or gross by Thursday. Enjoy!
